Healing, Healthy Soup | Plant-based, vegan recipe



Guys, this soup is an absolute staple in my diet. It’s so full of nutrients, it’s perfect for anyone who’s looking for a healthy recipe that they can customize and make their own. I call this a forever-soup because the base is so simple, you can keep it in your fridge and added ANYTHING to it to make it last a long, long time!!

Here’s what you’ll need (but feel free to augment and customize however you see fit)

Avocado or grapeseed oil
1 onion
3 cloves of garlic
Herbs and spices: You can use Italian blend – I particularly love to use cumin
1 leek
1/2 c mushrooms (I used shiitake, but you can use anything)
3 c (approx) vegetable stock (see below)
1 can of beans
1 can of crushed tomatoes (make sure they are organic)
1/2 c lentils

Spinach or baby kale to finish
