Chick pea sandwich
Red pepper 100g
Green onions 20g
Salt to taste
Pepper to taste
Shredded carrot 65g
For the mayo:
You Can absolutely use store-bought mayonnaise which will taste really delicious but if you don’t have that on hand we can always make homemade mayonnaise.
1 cup Cashews
1/2 cup water
1 clove Garlic
1 tbsp Lemon
1 tbsp vinegar
salt to taste
pepper to taste
Let’s talk about how you can prepare your chicke peas for this recipe. You can use canned chick peas for this recipe if you don’t have time to cook your chick peas. if you prefer to use fresh chick peas just make sure you soak them over night for about 8 hours to activate it that way cooking time will be much less. Once soaked cook until tender.
Whatever method of choice you are going to choose Place chick peas in food processor and pulse. We don’t want mushy consistency but rather we want to celebrate the chunky glorious bite of the golden little gem. Pulse a couple times in processor. Set aside
Soak cashews in hot water for 1 hour. Once that is done discard the water.
To a blender add the 1 cup soaked cashews, 1 garlic clove, salt, and pepper, water, lemon, vinegar. Blend until creamy. Place cashew cream into chick peas and mix. Now add finely chopped red peppers, shredded carrot, and spring onion greens. Taste and add salt and pepper as needed. Now you are ready to feel your sandwich.
